Food blogger Emma Hayes gluten-free thinks lunch should be interesting as well as nourishing. “Lunch is when I get creative,” Emma notes. “I want food that will keep me going all through the day.”
Emma loves her Lettuce-Wrapped Chicken Tacos among her dishes. She loads tacos with grilled chicken, avocado, and a tart lime crème created from coconut yoghurt using crisp romaine leaves in place of taco shells. “It’s a fresh, delicious variation on a classic,” she says.
Her cauliflower fried rice is also rather remarkable. Made with scrambled eggs, mixed vegetables, and riced cauliflower, this dish replics the taste of classic fried rice without the carbs. For real taste, Emma adds green onions with sesame oil. She guarantees, “It’s so good; you won’t miss the rice.”
Another hit are Emma’s stuffed bell peppers. She bakes half peppers till soft after stuffing ground turkey, zucchini, and tomato sauce within them. “They are ideal for meal planning,” she explains. “Make a batch on Sunday; you will be set for the week.”
Low-carb and gluten-free meals never have to be monotonous with Emma’s suggestions.
