Maya White’s Low-Carb Pasta Alternatives to Try

Maya White used to believe her low-carb path meant she would permanently be bidding farewell to spaghetti. She then found a universe of great choices.

“I’m a pasta lover at heart,” Maya admits laughing. “Finding these substitutes turned everything around.”

Her list starts with spaghetti squash at the top. “It’s incredible how much it resembles real spaghetti,” Maya notes.

She roasts the squash, then scrapes out the threads and mixes them with olive oil, garlicky parmesan. “It’s simple but quite fulfilling.”

Maya suggest shirataki noodles as a heartier choice. Made from konjac yam, these noodles almost have no carbohydrates.

She says, “The texture can take some getting used to,” “but with a rich marinara or Alfredo sauce, it’s a game-change.”

Still another favourite are zucchini noodles. Maya sautés them gently to prevent sogginess and goes with pesto or a creamy avocado sauce. “They’re ideal for a quick dinner tonight,” she comments.

Maya’s suggestion is “Don’t hesitate to try different things. You will discover one you enjoy from the many low-carb choices available. She has been able to guilt-free eat her preferred foods with these substitutes.
