Zoe Ross’ High-Fiber, Low-Carb Snacks for Long Days

Zoe Ross was not only seeking weight loss when she learnt the advantages of a low-carb, high-fiber diet. She needed constant stamina to run through her demanding freelance graphic design days.

“I needed snacks that wouldn’t cause an hour later a crash,” she explains. Zoe is pleased to share her favourites as her trip resulted in crafty and mouthwatering choices that keep her going.


One of Zoe’s staples is roasted chickpeas. Packed with fiber and protein, these crunchy treats are seasoned with a mix of paprika, garlic powder, and a pinch of sea salt.


“They’re my version of chips but so much healthier,” Zoe explains. She roasts a big batch every Sunday to have on hand throughout the week.


Celery sticks combined with almond butter are also rather delicious. Along with good fats, this mix gives a pleasing crunch. “It’s great when I’m in back-to–back meetings and need something quick but filling,” Zoe adds.


Zoe suggests chia pudding created with unsweetened almond milk, a little vanilla and topped with fresh berries as a sweeter choice. “It feels like dessert, but it’s really so good for you,” she notes.


Zoe stresses that preparedness is really vital. She counsels, “you’re less likely to grab junk food if you have healthy snacks ready.”

Including these low-carb, high-fiber foods into her regimen has helped Zoe strike the balance required to remain active and creative.
