For Layla Bell, winter brings cosy evenings and filling dinners. She is, however, dedicated to a low-carb diet and has had to get inventive with her comfort food selection.
Layla says, “I didn’t want to give up those warm, satisfying foods I love.” “So I discovered methods to create low-carb yet still mouthwatering cuisine.”
Layla often makes cauliflower mac & cheese from her recipe book. On a cold night, she explains, “It’s creamy, cheesy, and everything you would want.”
She sautés cauliflower florets until tender, then smothers them in a sauce combining sharp cheddar, cream, and a little mustard. She assures us not even missing the spaghetti.
Making zucchini noodle chicken soup is another passion of Layla. She substitutes spiralizer-made zucchini noodles—also known as ‘zoodles—for conventional spaghetti.
“It’s light but still warms you,” she says, pointing out that homemade broth makes all the difference.
Layla reaches for baked cinnamon apples topped with stevia and a handful of crushed pecans when she yearns something sweet. She compares it to apple pie filling but without the carbohydrates.
What guidance Layla offers for others? Pay close attention to tastes and textures you enjoy. Your favourite comfort foods can always be recreated in a better manner from a health standpoint. Her dishes show that being on target does not mean giving up pleasure.
